This delicious gluten-free quinoa salad with tamari chicken and Greek basil is aromatic, healthy and delicious. Perfect for the warm season it is made with only few ingredients, but full it is of flavor thanks to the use of many herbs and spices.
Tamari is a traditional fermented Japanese soya sauce with an umami taste. It is amazing to give flavor to meats and stir-fries, and in this case it creates a beautiful contrast with the freshness of the cherry tomatoes and spring onions and the aroma of the Greek basil.
Is soya good for you? Soya has been used for centruries in Asia, and some of the population of East Asia are among the healthiest on the planet, like Japanese people. If soya is produced, treated and processed in the traditional method used by generation it is ok to use.
The best Tamari sauce to use. If you are looking to try a Tamari sauce I would reccomend this, which is organic and made in Japan. The taste is superior to any that I have tried so far, and you can literally use only a few drops to give tatste and aroma to dishes.
For the salad
- 1/2 cup quinoa
- 1/2 cup black & red quinoa
- 15 cherry tomatoes
- 4-6 spring onions
- A pinch of Greek basil leaves (fresh)
- A pinch of oregano ( dried)
- Extra-virgin olive oil
- A dash of lemon juice
For the chicken
- 1 packet of chicken fillets 300 g
- A dash of tamari sauce
- a sprinkle Olive oil
- A dash of lemon juice
- 1 lemon slice
- Black pepper
- Place the chicken in a bowl with the olive oil, the Tamari sauce, lemon juice and black pepper, and leave it in the fridge for 10 min.
- In the meantime cook the quinoa according to the packet instructions. When ready add the chopped up Greek basil leaves, the oregano, the spring onions chopped up, and the cherry tomatoes cut in two. Season with a sprinkle of olive oil and lemon juice.
- Cook the chicken in a non-stick pan, with a sprinkle of olive oil and a slice of lemon. When ready add the chicken to the quinoa salad. Your salad is ready!
