Romano peppers & pecorino cheese salad

A delicious and full flavored salad that will leave you wanting for more.  This salad is great to have on its own as a starter, or combined with some lean meat. In this case I will propose it with an easy to cook turkey steak.

A delicious and full flavored salad that will leave you wanting for more. This salad is great to have on its own as a starter, or combined with some lean meat. In this case I will propose it with an easy to cook turkey steak.

Ingredients
  • For the salad
  • 1 packet of rocket salad (90 gr)
  • 1 romano red pepper
  • 4-5 leaves of radicchio rosso salad
  • 1/3 cucumber
  • 6-8 good quality pitted black olives
  • extra-virgin olive oil
  • a dash of fresh lemon juice
  • few shavings of Pecorino romano cheese
Directions
  • Step 1 Wash and clean all the vegetables, then place the rocket, the finely sliced cucumber & romano pepper, the radicchio leaves roughly cut, and the pitted olives cut in two, in a salad bowl, add the olive oil, dash of lemon juice, and stir. Add the Pecorino shavings on top an serve!
