Fennel, rocket & grapefruit salad

Perfect for the summer this fresh salad adds variety and nutrients to our diet. Perfect with fish like a simple pan fried sea bass fillet or as a starter. A good option as a summer garden party salad.

Ingredients (serves 1)

  • 1/2 fennel
  • a handful of rocket leaves
  • 2 thick pink grapefruit slices ( no rind)
  • a sprinkle of extra-virgin olive oil

Simply roughly cut the fennel in slices, add the rocket leaves and the grapefruit, cut in little cubes. season with a small quantity of olive oil and mix. Serve as a starter or an accompaniment to fish.
