A variation to a typical Sicilian salad this fenne, rocket and grapefruit salad oi fresh, delicious and great as an accompaniment to fish or as a starter. Perfect for the summer this fresh salad adds variety and nutrients to our diet. Perfect with fish like a simple pan fried sea bass fillet or as a starter. A good option as a summer garden party salad.
Ingredients
Serves 1| Ready in 5 min
- 1/2 fennel
- a handful of rocket leaves
- 2 thick pink grapefruit slices ( no rind)
- a sprinkle of extra-virgin olive oil
Method
Simply roughly cut the fennel in slices, add the rocket leaves and the grapefruit, cut in little cubes. season with a small quantity of olive oil and mix. Serve as a starter or an accompaniment to fish.
